Title: Spinach Salad with Orange Dijon Vinaigrette

3tbVegetable oil
3tbOrange juice; frozen concentrate
1tbWhite wine vinegar
1tsDijon mustard
1/4tsSalt
1/4tsPepper
4cSpinach leaves or salad greens, fresh, torn
4cBibb lettuce; torn
2cMushroom; sliced

In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon water, vinegar, mustard, salt and pepper. Just before serving, add spinach, Bibb lettuce and mushrooms; toss to combine. Makes 4 servings. Per serving: 142 cals, 4 g pro, 11 g total fat, 10 g carb, 3 g fibre.
